Honeymoon Carrots

Ingredients:

4 C. baby
2 Tablespoons brown sugar, packed
2 Tablespoons honey
2 Tablespoons fat-free margarine

Directions:

Combine sugar, margarine, and honey in a saucepan. Heat and stir constantly until melted. Place in an ovenproof casserole dish, with a lid. Pour honey mixture over and stir well. Bake at 400 degrees F for one hour. (Serves 6)

Incredibly Good Green Beans Recipe

Ingredients:

1 pound fresh
2 teaspoon olive oil
3 large thinly sliced shallots
1/4 teaspoon pepper
2 teaspoons grated lemon zest
1/4 cup thinly sliced basil leaves
Lemon wedges

Instructions:

In a large nonstick skillet place 1/2 inch of water and bring to boil.  Add cover and simmer over medium low heat until tender crisp, about 8 minutes.  Drain well.  Heat oil in skillet over medium heat.  Add shallots and cook 2 minutes or until soft and slightly browned.  Replace .  Sprinkle with pepper.   Continue cooking, stirring constantly, about 2 minutes or until heated through.  Remove skillet from heat.  Stir in lemon zest and basil. Garnish with lemon wedges and serve immediately.

Ingredients:

1 pound frozen florets, thawed and chopped
1 bunch green onions, chopped
1 cup shredded
2 tablespoons cilantro, finely chopped
1 tablespoon dry dill weed, crumbled
1/4 teaspoon pepper
1/2 cup fat free milk
1/2 cup flour
Enough egg substitute to equal 2 1/2 eggs
1 1/4 cup non-fat sour cream

Instructions:

In a large mixing bowl place , onion, , cilantro, dill wee, basil and pepper.  In a small bowl whisk together milk, flour and egg substitute until smooth.  Pour mixture over vegetables.  Preheat oven to 300 degrees.  Place baking sheet in the oven to warm.  Place a skillet over medium heat.  Put 1/4 cup of batter into skillet.  Cook about 10 minutes per side.  When brown flip and brown other side.  Transfer cooked pancakes to baking sheet in oven to keep warm.  Serve warm with a dollop of sour cream on top.
