Warm You Up Vegetable Soup Recipe

Ingredients:

1 cup chicken broth
1/2 cup potatoes peeled and chopped
`/4 cup celery chopped
`/4 cup carrots chopped
1/4 cup sweet red pepper, chopped
1 cup skim milk
2 tablespoons flour
1/4 cup shredded American cheese
Dash ground nutmeg

Instructions:

Combine broth, potatoes, celery, carrots and sweet red pepper in a large pot.  Cook on medium high temperature until boiling.  Reduce heat, cover and simmer 10 to 12 minutes or until vegetables are tender.  In a small mixing bowl combine milk and flour.  Mix until smooth.  Pour milk mixture into broth.  Cook stirring continuously until thick and bubbly.  Continue to cook 1 minute more.  Stir in cheese and continue to stir until melted.  Sprinkle top with nutmeg.

Snuggle Up Chowder Recipe

Ingredients:

3 cups fat-free milk 
1 can (10-3/4 oz.) condensed cream of potato  
2 cups frozen Southern-style hash browns 
1 cup shredded reduced fat sharp cheddar cheese 
2 slices bacon, cooked, drained and crumbled 
1/4 cup thinly sliced green onions 

Instructions:

Pour milk into a Dutch oven pan.  Add and mix together well. Add hash browns being sure to mix well to breakup hash browns and to make sure they are completely covered by the mixture.  On high heat bring mixture to a boil.  Once boiling reduce heat to low, cover and simmer 15 minutes or until heated through.  Be sure to stir often to keep from sticking to bottom of pan.  Remove from heat and sprinkle top with onions, bacon and cheese.  Serve immediately.
