Way To His Heart Beef Combo

Ingredients:

½ lb lean ground beef
1 small onion, chopped
3 C. frozen potatoes O’Brien, thawed
1 C. salsa

Directions:

Brown ground beef and onion. Pour off any extra oil. Stir in potatoes and cook over medium heat for about five minutes. Stir in salsa and heat ten minutes more. (Serves 6)

Ingredients:

½ C. finely chopped onion
½ C. finely chopped bell pepper
1 (15 oz.) chunky tomato sauce
2 Tablespoons brown sugar substitute
2 (16 oz.) cans great northern beans, rinsed and drained
8 oz. diced, fat-free frankfurters
Cooking spray

Directions:

In a large skillet, coated with cooking spray, sauté onion and green pepper. Stir in tomato sauce and brown sugar. Add beans and frankfurters. Mix well. Lower heat. Cover and simmer 15 minutes. Stir occasionally. (Serves 6)

Pucker Up Lemon Chicken

Ingredients:

6 chicken breasts, boneless & skinless
1 teaspoon garlic salt
2 lemons, juiced
¼ C. melted fat-free margarine

Directions:

Place chicken in baking dish. Mix garlic salt and lemon juice. Rub mixture on chicken. Melt margarine and pour over chicken in baking dish. Bake at 350 degrees F for one hour. Baste often.  (Serves 6)
