Healthy French Toast Recipe

Ingredients:

1 slightly beaten egg
1 slightly beaten egg white
3/4 cup skim milk
1 teaspoon vanilla
8 slices French bread, 1/2 inch thick each
1/4 teaspoon finely shredded orange peel
2/3 cups orange juice
1 tablespoon honey
1 1/2 teaspoon cornstarch
1/8 teaspoon cinnamon

Instructions:

Combine both types of eggs, milk and vanilla in a large bowl. Mix well. Dip bread in egg mixture being sure to coat both sides.  Spray a cookie sheet with non-stick canola spray.  Place coated bread on cookie sheet.  Preheat oven to 450 degrees.  Bake 6 minutes or until bread starts to brown.  Flip and continue to bake 5 to 8 minutes or until golden brown.  To make syrup put orange peel, orange juice, honey, cornstarch and cinnamon in a saucepan.  Cook over medium heat until mixture starts to thicken.  Continue cooking, stirring occasionally, for 2 more minutes.  Serve syrup over .

Ingredients:

1 medium onion, chopped
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 tablespoons unsalted butter
6 cups diced cooked potatoes
2 cups cubed cooked turkey
1/8 teaspoon cayenne pepper
1/8 teaspoon ground nutmeg

Instructions:

In large skillet over medium heat melt butter.  Add onion, green pepper and red pepper.  Cook until fork tender.  Add potatoes, turkey, cayenne pepper and nutmeg. Reduce heat to low, stirring occasionally, for 25 minutes or until heated through. 

Nutritional Information (approx):

187 calories, 5 g fat, 0 saturated fat, 27 mg cholesterol, 66 mg sodium, 23 g carbohydrate, 0 fiber, 13 g protein.
